Ingredients (2 cups of tapioca pudding):
1 cup large tapioca pearls (80 grams)
1.5 cups of water
1 cup of lowprotein milk (Lp drink, ProZero, coconut or rice milk)
pinch of salt
1 table spoon of crystal or brown sugar
1 table spoon of vanila esence
coconut cream delcoco- 30g= (31.5mg phe)
(Optional) cornstarch for thickening
Place water and salt in a saucepan with a lid. Bring to a boil and add the large tapioca pearls. Lower the heat to medium-low to let them gently simmer. Cover the lid. Make sure the heat is on medium-low so it won't boil over. Stir the tapioca pearls every 5 minutes so they won't stick to the bottom of the pot. This step requires time- about 20 minutes as we're using large tapioca pearls.
Add lowprotein/vegan milk. Tapioca pearls need to be cooked for about 45 minutes to 1 hour or until the tapioca pearls are no longer hard in the center. They may still have some cloudiness in the center (white spots), but as long as the tapioca pearls are soft and chewy the way you like them, they are done.
When you are happy with the texture of the tapioca pearls, stir in sugar until it melts and also add vanilla extract. Stir in the milk. Have a taste and add more sugar if you want it sweeter. Keep the heat on low. The tapioca pearls have slightly thickened the milk. Method on the video below.
