The amazing thing about Tacos and Rice Rolls is that everyone can get as creative as they want and use whatever veggies you love:)
PKU Tacos tortilla:
2x cups of Damin flour
4 table spoons of sunflower or vegetable oil
1 tea spoon of salt
3/4 cup of warm water
Dough has to be done manually, by using mixer it would not get to the right consistency- You can fill tacos with any vegetable you like, and also jack fruit or loprofin meat. It is also perfect with vegan yogurt and garlic dip. As I do not have a holder for tortillas to make it tacos shape, I have used the kitchen tongs while tortilla bread was still hot - check the picture bellow.
If there is no time for baking tortilla breads, a great help are rice papers. I have used the brand Bioorganic, and 1 rice paper has only 12mg phe. I have filled the rice rolls with cooked and flavoured cauliflower - I have used different spices- e.g. sweet paprika, salt, mixture of spices for vegetables. Rice rolls are of course great with soy sauce and tacos torilla with any dip, my Vaneska likes them without a dip. Avocado or vegan yogurt and garlic dip are perfect choice though.
