Pancake roll with mascarpone cream and kiwi


Pancakes (10-11 pancakes):

Ingredients

7 full spoons of Nutricia bread mix or Sunny flour,

1 quail egg,

pinch of salt,

1 tea spoon of brown sugar

300 ml of milk- I used Loprofin LP drink

(1 pancake is about 7mg Phe)


Filling:

250g of vegan mascarpone (in this recipe is used mascarpone by the Slovak brand Rajo)

100ml vegan whipping cream = Schlagfix brand

a little bit of vanilla essence

kiwi 6x

  1. Mix all the ingredients for pancakes and make a dough. Add sunflower oil to a heated pan and bake until golden brown on both sides.

  2. Filling procedure: First, mix vegan mascarpone and vanilla essence using a hand mixer. After whipping the mascarpone, add the whipped cream and mix until stiff.

  3. Put 6 pancakes next to each other as in the picture and put a layer of mascarpone on the top, then place 6 kiwis on them (or as many as will fit depending on the size of kiwis used) and cover the kiwis with another layer of mascarpone and roll into a roll.
