Budha bowl with crispy vegan ´meat´

Ingredients in this recipe:


purple carrot

yellow carrot

green peppers

radish

avocado

violife greek style cheese

Mevalia rice

jackfuit

rice papers

PKU breadcrumbs

starch

Mevalia flour



Ingredients for a quick sauce:

1 table spoon of soy sauce

1 table spoon of olive oil

20ml water

pinch of salt

sauce thickener: maizena/cornstarch


Ingredients for Jackfruit meat:

1 can of jackfruit

500ml water

spicies: salt, onion and garlic powder, paprika

1 tea spoon of corn starch

2 table spoons of lowprotein flour

rice papers

for frying- corn starch, lowprotein flour and lowprotein milk


From 1 can of jack fruit you can make 4-5 pieces of a meat. It depends on how much filling you use in 1 rice paper. The picture above reflects meat with a weight of 74g and total phe count is 40mg phe for this piece.




Method:

  1. Cook jackfuit for 20 minutes in 500 ml water and add spicies.

2. Drain, and keep the broth as you will use it later.

3. Squash jackfruit to little pieces so its gonna be easier to make a meat filling.


4. Into the bowl with jackfuit add corn starch and lowprotein flour and mix it well.


5. Pour broth from jackfruit into a baking sheet and let the rice paper soak in it. Wrap your ´meat´ onto the rice paper and then cover each ´meat´ in corn starch, milk and lowprotein breadcrumbs and fry in oil until golden. Full process on the video below:
