Cake made of fresh fruits

For this Bday cake full of fresh fruits, you will only need a yellow melon, fruits of your choice and small toothpicks for sticking the fruits to the yellow melon.
Longer toothpicks will help with the construction- holding the second half of your yellow melon for making it 2-tier Bday cake :)

2. For baking PKU cakes there are quite nice mixtures from taranis, Nutricia and Loprofin to make our life easier as I do spend so much time decorating with mascarpone and whipping cream, I love baking with these- my absolute favourite one is Taranis.

The ratio for making a decor cream is: 2 mascarpones and 500ml of whipping cream. I start with mixing mascarpone cream first and then I add whipping cream and mix properly together with mascarpone. You can add food coloring of your choice if you want to make a cake colorful.

Ingredients used in this cake:
Upper cake: Taranis baking mix
Bottom cake:
200g lowprotein flour (I used Damin)
Egg replacer (Orgran 2 eggs)
40ml water
100g coconut sugar (to make it brown)
5g honey
150g vegan sour cream (I prefer Planton)
6g baking powder
Bake at 160 degrees for about 50 minutes.
Cream and filling:
2x vegan mascarpone
500ml Schlagfix whipping cream
Vanila essence
Strawberries

Both cake tiers Nutricia chocolate cake mix
Cream and filling:
2x vegan mascarpone
500ml Schlagfix whipping cream
Vanila essence
Food coloring
gold for decor

3. Vegan Yogurt cake
This yogurt cake should be made day before the Bday, as it needs to thinken in a fridge for at least 10 hours.

Ingredients used in this cake:
For the cake layer:
150ml Pro zero
Egg replacer Orgran- 2eggs
20ml water
80g caster sugar
6g powder sugar
200 flour (I have used Damin, bud use any you prefer)
Bake at 180 degrees 20 minutes.
For the creamy part:
Mix: 1 Mascarpone Schlagfix, 2x Planton sour cream, 3x vegan yogurts (any of your choice), if needed add some sugar and mix properly.
Add some nice fresh fruits :)
It is important to use a baking cake form for adding the cake first and then creamy layer with fruits. When done, put it in a fridge for a night.
